Celery Juice
Biography
Celery belongs to the Umbelliferae family whose other members include carrots, fennel, parsley and dill. The juice of celery tastes quite salty due to its natural organic sodium content, so for some it can take abit of getting used too. Personally i love it especially as a replenishment of electroytes after exercise.
Celery juice is traditionally thought to be good for the liver, hypertension, gastrointestinal health and dizziness. I refer to juices such as cucumber, celery, carrot as more mixer juices to disguise the darker stronger vegetable juices.
Celery juice leaves can also be juiced and are a rich source of nutrients especially vitamin A.
Nutritional Analysis
Celery is a rich source of vitamins K, C, B1, B2, B6, folate and is equally as rich in the minerals potassium, sodium, calcium, molybdenum, manganese, magesium and phosphorus aswell as good amounts of some essential amino acids. It is also rich in Chlorophyll which benefits can be found here.
Celery is a good source of phytonutrients 3-n-butyl phthalide which has been shown to help lower blood pressure levels. A study from Case Western Reserve University found that another celery phytonutrient, apigenin which halted prostate cancer cell growth.
