Biography

Kale is a leafy green vegetable that belongs to the Brassica family, a group of vegetables including cabbage, collards and Brussels sprouts. Kale leaves are packed full of nutrients and goodies so its a wonderful vegetable to juice aswell as its unique earthy taste. Dark green leafy vegetables in my opinion are the best way to get calcium.

Nutritional Analysis

Kale Juice is rich in the vitamins A, C, K, E, B1, B2, B3 and B6, whilst being equally as rich in the minerals calcium, maganese, copper, iron and magnesium.

Like other members of the Brassica family, Kale contains phytonutrients that have been shown to help prevent cancers such as breast and ovarian. Its the organosulfur compounds that are thought to contribute to kales cancer preventing benefits. These beneficial compounds include the glucosinolates and the methyl cysteine sulfoxides.

Sulforaphane is another phytonutrient found in kale which has been shown to boosts the body's detoxification enzymes thus in turn helps the body clear carcinogenic substances more quickly.
