Juicing For Health - Raw Almost Chocolate Cashew Butter Recipe
This is a great recipe that i make now and again which i created myself that i like to call raw almost chocolate cashew nut butter. The reason it is called almost chocolate is because we use no cacao or cocoa powder like many other chocolate nut butter spreads do. Instead we use carob which is what i like to call a chocolate substitute and contains no stimulants such as caffeine and theobromine like cacao does.
If you have access to a high powered blender or food processor such as a vitamix then try whip up some nutritious healthy nut butters. For the price that many nut butters cost in stores you can make up a batch for the fraction of the cost at home and choose whatever ingredients that you like.
Sometimes i will add a little green powder, ionic minerals etc to boost the nutritional content. But if you are looking to keep the cost down just go with simplicity.
As you can see in the picture i never blended the ingredients until they went smooth as i like a little crunch in my nut and peanut butters. You may need to add a little liquid so that it blends easier, obviously you dont want to add too much or your butter will go runny. I added about an Oz of cocobiotic fermented drink, which contains live good bacteria, rich in enzymes which aid digestion.
You will want to add a sweetener most likely as many nuts can be quite bland in taste i find. I used yacon syrup which is one of my favorite sweeteners as it is an effective prebiotic. A prebiotic is a substance which stimulates and feeds the good bacteria.
Raw Almost Chocolate Cashew Butter Recipe
- 2 Cups Of Raw Cashew Nuts
- 1 1/2 Tablespoon Of Raw Carob Powder
- 1 Tablespoon Yacon Syrup Or Other Sweetner
- 1 Oz Water Or Other Liquid
Recipe Instructions
- Fairly simple recipe, you would want to add the cashews first, carob powder, sweetner and liquid.
- Start on a slow speed then increase slowly, you will likely need to use the taper stick that comes with the vitamix to push the nuts down so they are evenly blended.
- Enjoy :) , after you have cleaned the messy blender of course.

The sugars are naturally occurring fructose from fruit and unless you have diabetes or other problems with blood sugar are perfectly fine sources of carbohydrates.
Do note that nutritional values will vary. The pudding is quite high calorie due to the avocados fat and the dates carbohydrate content, but both come from natural sources which are also rich in various nutrients such as vitamin C. Basically a healthier raw food spin on popular unhealthy processed desserts.
