Juicing For Health - Raw Coconut Superfood Cake Recipe
This is a nice recipe for a raw coconut superfood cake that i made a while back. The recipe is so versatile in that you can use the superfood powder base for a number of cakes or as a cake on its own which is delicious biscuit type cake. In this case i decided to mix with some coconut oil to give it a nice rich taste. You could also such cacao butter which is delicious.
The cakes are quite high in fat being that a portion of the ingredients come from the coconut oil. But the fats contained in coconut are where many of its benefits derive from such as increasing energy, stimulating the immune system, thyroid health, intestinal health and much more.
Raw Coconut Superfood Cake Recipe Ingredients
- 1 Cup Organic Virgin Coconut Oil
- 5-6 Tablespoons Organic Lucuma Powder
- 2 Tablespoons Organic Mesquite Powder
- 1 Teaspoon Organic Maca Powder
- Pinch Of Himalayan Salt
- Handful Of Goji Berries
Instructions
- Prepare the powder mixture with the recipe above and blend in a bowl.
- Measure out coconut oil and liquefy. There are a number of different ways to liquefy coconut oil so it still stays raw. I left it out in sunlight. Hot cupboards, putting the bowl in another warm bowl also work.
- Once the coconut oil is liquefied transfer to another bowl and stir in the powder mixture instantly.
- Now the mixture is ready so transfer to your moulds, add a sprinkle or two of goji berry in each one and then freeze for around an hour.
- Your raw cakes are ready. ENJOY:)
