Biography

Watercress is part of the Brassicaceae family or cabbage family, botanically related to garden cress and mustard.

Watercress juice has a bitter and very peppery taste which can range from mild to very peppery. The bitter properties stimulates the vagus nerve which in turn helps digestion and cleanses the liver.

The juice is traditionally used as an aid to the liver, gallbladder and endocrine system.

Nutritional Analysis

Watercress is an excellent source of vitamins B1, B2, B6, C, E, manganese, and carotenes. It also a good source of calcium, iodine, iron and copper.

Watercress is rich in the carotenoids Lutein and Zeaxanthin which promote good eye health. Quercetin, a type of flavonoid and a powerful antioxidant, is also found in high quantities.

Watercress contains high levels of a type of glucosinolate called phenylethyl isothiocyanate(PEITC). PEITC gives the plant its peppery flavour and has been shown in studies to increase the bodys ability to resist the effects of carcinogenic substances.
